Learn to touch type. I'm semi-good at it at the moment, but have a long way to go as far as speed goes.

Learn how to use vim.

Do a backflip.
Throw knives.
Walk on your hands.
Tie a bunch of useful knots.
Learn the dvorak keyboard. (you can seriously get up to manageable speed in a week but it'd be better to do this when you don't need to type anything important. Also, look at it like learning to drive a stickshift. You don't have to convert your computer if you don't like it, and you might as well learn how.
Drive a stickshift.
Drive a motorcycle.
Ride a unicycle.
Pick locks.
Eat a worm a day (for a week).
Just some suggestions.

Imspired, if you don't want to try VIM, maybe at least the VIM-knockoff Vimperator Firefox extension? Learning to drive a motorcycle, on the other hand, is a bit more than a week's project.

Incidentally this is one of my favorite stoned pastimes.

Education

There is little sense in saying "a Linux OS" because there is only one Linux OS, and that is Linux. Debian and Ubuntu are Linux distributions, which are composed of the Linux kernel (i.e. the core of the operating system) plus a bunch of software.
(Versions of Linux, such as Linux 2.2, Linux 2.4, and Linux 2.6, do not count as independent OS's.)

"Terminal" is a happy-clicky-GUI interface to a (command) shell. The function of Terminal is to run a shell, and optionally to do so in an aesthetically pleasing way. There is nothing to really "learn" about Terminal, unless you're dysfunctionally curious about how it handles fonts and color schemes or something.
Notice also that I said a shell, and not the shell. Since there is no standard or official shell for Linux, it does not make sense to say that one should "learn how to use the shell" (which I imagine you would have said if you realized Terminal was just a GUI wrapper). The commonly-used shells have significant differences between them, so it would make much more sense to say something like, "learn how to use the 'Bourne-Again' Shell, bash".

For a newbie, I'd recommend starting with Ubuntu. Once he gets comfortable and wishes to explore more features of the Linux operating system (or needs to fix a non-trivial problem), I would recommend learning about bash, which ought to come with just about any Linux distribution.
Personally, I use the Arch Linux distribution of Linux, and I use the Z Shell, zsh.

Learn how to solder?
Learn how to juggle?
Learn how to make fireballs with a lighter?
Learn how to roll a cigarette?
Learn some origami?

Learn how to use a shell.

Learn the six basic barbell movements (squat, deadlift, press, bench press, clean, snatch)

Pick a simple appliance or machine that you use every day and take for granted -- refrigerator, copier, car engine, etc -- and learn everything you can about it.

Or you could memorize the Dewey Decimal System!

Ride a unicycle - backwards.

I can do the first minute or so.

Unicycling would be amazingly fun.

Learn to code in Brainfuck/something not impossible.
Learn basic phrases in a new language.
Learn some woodworking techniques.
Etc.

Learn how to cook different types of food, from oatmeal to steak, spaghetti to cupcakes.. the list can go on and on for all 52 weeks.

Spend one week a couple times in the year to go back and apply what you've already learned, that way you don't just forget most of it.

Learning to ride a uni sounds awesome. Also, finish with a bicycle kick in a soccer game.

Try to solve a Rubik's cube. There are useful materials to learn tricks on Youtube like this.

i definitely second the rubiks cube. its honestly not that hard to learn and the common man is amazed by it, even after a week of legitimate practice it gets to be quite easy, i recommend it to everyone.

Learn the capitals of every country. A friend of mine knows them; it's really quite creepy.
