I can't seem to do it. I'm sure there were horizontal doors in the game, in fact I'd bet my life on it. I can get doors to sort of "go" horizontal for a little while, by fiddling with the direction buttons, but when I place them, they either snap back to being vertical, or they appear inbetween the useful grid spacing.

It's a known bug. For now, you can use a controller if you have one.
Should be fixed soon.

From a stickied post on Discord, credit to Garaman:
Until the editor is fixed you can rotate doors by using a controller, or by using the following workaround:
1) Press '[' and 'S' to select a horizontal 1-way platform
2) Place the mouse cursor near where you want the door to be
3) Without moving the mouse:
a) Press 'I', 'O', or 'P' to select a regular, locked, or trap door
b) Click to place the door. It will appear vertical for the moment.
4) Click again to place the switch where you want it. The door will change to a horizontal orientation.
5) Use the 'F' key to drag the door to where you want it.

Ahhhhhhhhhhhhh. Wow, I could have worked that out myself. I'd gotten the door to place horizontally, and I knew about F dragging. Thanks.
BTW some might not know but you can also use the F dragging to do fine placement of objects. Ah, who am I kidding, you all probably know that.
