I'm just wondering if to get an episode highscore you must play through the whole episode one level after the other and only those times are contributed to the episode time. OR can you beat the score of ANY level in that episode any other time and have that score contribute to your episode highscore?

Bingo. If you want an episode highscore, you have to do it all in one go - all five levels one after the other.
