Let's say that this is every generation/movie/book/video game from each universe. Would Galactus try eating the two Death Stars? And could their lasers destroy it? That's something you might want to consider.
As far as the people who aren't insanely powerful and/or omnipotent, I'd say Star Wars would win. If it were just the people who aren't the pawns in this chess board (I'm guessing all of the Marvel universe, all of the Jedi/Sith/Dark Jedi+Boba Fett, and I don't know who in Star Trek), I'd still say Star Wars would win. If it was space, the Star Trek universe might stand a chance against the Star Wars universe, if the Jedi weren't trained as pilots (Marvel would flat out lose in space), if it were land, the Star Wars universe would be fighting against an army of superheroes on a battlefield littered with red shirt-wearing bodies, plus those other Star Trek guys. Star Wars has the advantage in that situation because the Jedi/Sith can harness the Force. I mean, if you have someone so powerful that they can pull an entire Star Destroyer out of the sky and onto the ground, the other side is pretty much fucked.

Cyclops's force beam Vs. Force push.
Adamantium Claws and Healing Factor Vs. Lightsaber and Cloth Robes.
Magneto. Just Magneto. Goodbye lightsabers for a start...
And so on.
The fight's nowhere near balanced. Jedi's are martial artists with slight telepathic talent, and Star Fleet are just smart bods on space ships with above average CQC skills and Phasers (phaser's blocked by Jean Grey and Proffesor X's telepathy, and Forge's technology, etc...).
Even in space, you're forgetting the Shi'ar empire, The Skrulls, The Kree's etc... And even if we're just talking X-Men, they have access to Shi'ar tech , The Beast's Science, Forge's inventions, etc...
No contest.

When Galactus was newly formed, the energy of a medium-size Earth-like planet sustained him for over a century. Though seemingly destroyed on several occasions, Galactus is always restored to full power eventually. In addition, despite being a physical being, Galactus can adopt a manifestation (M-Body) from the Dimension of Manifestations in order to commune with abstract beings, such as Death and Eternity.
